Cornmeal Muffins

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1 cup unbleached all-purpose flour
  • 4 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1 cup yellow cornmeal
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 3/4 cup milk

Recipe

  • 1 grease 12 2 1/2-inch muffin cups.
  • 2 heat oven to 425°f.
  • 3 sift flour, baking powder, sugar and salt into medium-sized bowl.
  • 4 add cornmeal and stir to mix well.
  • 5 in small bowl, beat eggs with fork.
  • 6 add milk and oil.
  • 7 add all at once to dry ingredients.
  • 8 stir mixture only until dry ingredients are moistened.
  • 9 batter will be lumpy.
  • 10 drop batter from a tablespoon into the prepared muffin cups, filling each cup 1/2 to 2/3rds full.
  • 11 bake 15 to 20 minutes, or until golden brown.
  • 12 remove and serve hot with butter, bacon and eggs.
