Cornmeal Muffins

Ingredients
- 1 cup unbleached all-purpose flour
- 4 teaspoons baking powder
- 2 tablespoons granulated sugar
- 1 teaspoon salt
- 1 cup yellow cornmeal
- 2 large eggs
- 1/4 cup vegetable oil
- 3/4 cup milk
Recipe
- 1 grease 12 2 1/2-inch muffin cups.
- 2 heat oven to 425°f.
- 3 sift flour, baking powder, sugar and salt into medium-sized bowl.
- 4 add cornmeal and stir to mix well.
- 5 in small bowl, beat eggs with fork.
- 6 add milk and oil.
- 7 add all at once to dry ingredients.
- 8 stir mixture only until dry ingredients are moistened.
- 9 batter will be lumpy.
- 10 drop batter from a tablespoon into the prepared muffin cups, filling each cup 1/2 to 2/3rds full.
- 11 bake 15 to 20 minutes, or until golden brown.
- 12 remove and serve hot with butter, bacon and eggs.
