Cornmeal And Chili Muffins

Ingredients

- 1 cup cornmeal
- 1 tablespoon sugar
- 1 1/2 cups flour
- 1 tablespoon baking powder
- 2 tablespoons vegetable oil
- 1 egg, beaten
- 1 1/4 cups milk
- 1 (15 ounce) can corn
- 4 green onions, finely chopped
- 2 dried red chilies, finely chopped
Recipe
- 1 preheat oven to 400 degrees.
- 2 combine dry ingredients in a bowl.
- 3 measure milk and add oil and egg to the cup.
- 4 beat, then add to a well in the dry ingredients.
- 5 stir until just moistened.
- 6 add remaining ingredients, stirring lightly.
- 7 grease a one dozen muffin tins.
- 8 pour 1/2 c batter into each well.
- 9 bake 20 minutes.
- 10 let cool 5 minutes before serving.
