Barberry Conserve

Total Time: 1 hr Preparation Time: 1 hr

Ingredients

  • 2 oranges
  • 2 quarts barberries
  • 3/4 teaspoon cinnamon
  • 3 tablespoons lemon juice
  • 4 cups sugar

Recipe

  • 1 slice the oranges into very thin sections and remove the seeds.
  • 2 cook the slices in a little water till tender.
  • 3 clean and stem the fully ripe barberries.
  • 4 crush the fruit with a potato masher and strain the pulp and juice through a strainer to remove the seeds.
  • 5 add the juice pulp to the cooked oranges and mix well.
  • 6 add the cinnamon, lemon juice and sugar.
  • 7 mix well and bring to a boil, then simmer over a low heat till the sauce thickens.
  • 8 remove from heat; pour into hot sterile jelly jars and seal.
