Barberry Conserve

Ingredients
- 2 oranges
- 2 quarts barberries
- 3/4 teaspoon cinnamon
- 3 tablespoons lemon juice
- 4 cups sugar
Recipe
- 1 slice the oranges into very thin sections and remove the seeds.
- 2 cook the slices in a little water till tender.
- 3 clean and stem the fully ripe barberries.
- 4 crush the fruit with a potato masher and strain the pulp and juice through a strainer to remove the seeds.
- 5 add the juice pulp to the cooked oranges and mix well.
- 6 add the cinnamon, lemon juice and sugar.
- 7 mix well and bring to a boil, then simmer over a low heat till the sauce thickens.
- 8 remove from heat; pour into hot sterile jelly jars and seal.
