Amish Coffee Cake

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 cups light brown sugar
  • 2 cups all-purpose flour
  • 3/4 cup shortening
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 cup hot strong coffee
  • 1 teaspoon baking soda

Recipe

  • 1 mix the sugar, flour and shortening until lumpy.
  • 2 do not mix until creamy.
  • 3 reserve 1 cup to use as topping.
  • 4 dissolve the baking soda in the hot coffee and add to the flour mixture.
  • 5 add the egg and vanilla.
  • 6 spread in a 9"x12"x2" pan (please note that this is a thin batter) and sprinkle on the reserved topping.
  • 7 bake at 325°f degrees for approximately 30 minutes.
  • 8 sprinkle with powdered sugar before serving.
