Amish Breakfast Puffs

Ingredients

- 1 1/2 cups unbleached all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon mace
- 1/2 cup sugar
- 1/3 cup canola oil or 1/3 cup vegetable oil
- 1 egg
- 1 teaspoon vanilla
- 1/2 cup milk
- 6 tablespoons butter or 6 tablespoons margarine, melted
- 1/2 cup sugar
- 1 teaspoon cinnamon
Recipe
- 1 preheat the oven to 350.
- 2 grease muffin pans.

- 4 in a bowl, stir together the flour, baking powder, salt and mace.
- 5 in a large bowl, with an electric mixer, beat the sugar, oil, egg and vanilla for 30 seconds.
- 6 add the flour mixture and milk alternaturely to the egg mixture, beating on low speed for 30 seconds after each addition until just combined.
- 7 fill 10 muffin cups 2/3 full of batter.
- 8 bake for 15 to 20 minutes or until tops of muffins are firm and golden.
- 9 while the muffins are baking, prepare the coating.
- 10 in a shallow bowl, combine the 1/2 cup sugar and the cinnamon.
- 11 in another bowl, melt the butter or margarine.
- 12 when the muffins are done baking, while they're still hot, roll each in melted butter and then to coat all over in the cinnamon sugar mixture.
- 13 serve immediately as they are, or with butter and jelly.
