Amish Breakfast Puffs

Ingredients

  • Servings: 10
  • 1 1/2 cups unbleached all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon mace
  • 1/2 cup sugar
  • 1/3 cup canola oil or 1/3 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup milk
  • 6 tablespoons butter or 6 tablespoons margarine, melted
  • 1/2 cup sugar
  • 1 teaspoon cinnamon

Recipe

  • 1 preheat the oven to 350.
  • 2 grease muffin pans.

  • 4 in a bowl, stir together the flour, baking powder, salt and mace.
  • 5 in a large bowl, with an electric mixer, beat the sugar, oil, egg and vanilla for 30 seconds.
  • 6 add the flour mixture and milk alternaturely to the egg mixture, beating on low speed for 30 seconds after each addition until just combined.
  • 7 fill 10 muffin cups 2/3 full of batter.
  • 8 bake for 15 to 20 minutes or until tops of muffins are firm and golden.
  • 9 while the muffins are baking, prepare the coating.
  • 10 in a shallow bowl, combine the 1/2 cup sugar and the cinnamon.
  • 11 in another bowl, melt the butter or margarine.
  • 12 when the muffins are done baking, while they're still hot, roll each in melted butter and then to coat all over in the cinnamon sugar mixture.
  • 13 serve immediately as they are, or with butter and jelly.
