Bakery Style Cookies

Ingredients
- 8 ounces margarine
- 1 cup sugar
- 1 egg (minus shell of course)
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1 1/4 cups matzo cake meal
- 3/4 cup potato starch
Recipe
- 1 preheat oven to 350 degrees. line cookie sheets with parchment paper for easy cleanup.
- 2 sift cakemeal and potato starch together.
- 3 cream margarine, sugar and vanilla till light and fluffy. add egg and yolk. mix well.
- 4 add the dry ingredients to the margarine/sugar mixture and mix thoroughly. at this point you may chill dough if you need to. put dough into a cookie press fitted with your favorite shape. press onto parchment paper, decorate if you wish and bake for 25-30 minutes or till lightly golden brown at the edges.
- 5 remove baked cookies to a wire rack to cool. watch them disappear!
