Cozy Carrot Potato Soup

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 4 medium yukon gold potatoes, peeled
  • 5 carrots, peeled
  • 5 garlic cloves
  • 2 tablespoons extra virgin olive oil
  • 2 vegetable bouillon cubes
  • 4 cups boiling water
  • 2 tablespoons dried basil
  • 2 tablespoons dried oregano
  • 2 teaspoons garlic powder
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt

Recipe

  • 1 chop potatoes, carrots and garlic.
  • 2 heat oil in a large stock pot. add potatoes, carrots and garlic and saute for a few minutes.
  • 3 dissolve bouillon cubes in boiling water and add to stock pot.
  • 4 add basil, oregano, garlic powder, pepper and salt. stir and cover.
  • 5 let everything simmer for 20 minutes, or until the carrots and potatoes are soft.
  • 6 remove from heat and stir.
  • 7 pour 3/4 of the mixture (including all the liquid) into a blender and puree until all is blended well. the blended amount should make about 2 bowls.
  • 8 pour soup into bowls and top each with the remaining vegetable bits left in the stock pot.
