Cozy Carrot Potato Soup

Ingredients

- 4 medium yukon gold potatoes, peeled
- 5 carrots, peeled
- 5 garlic cloves
- 2 tablespoons extra virgin olive oil
- 2 vegetable bouillon cubes
- 4 cups boiling water
- 2 tablespoons dried basil
- 2 tablespoons dried oregano
- 2 teaspoons garlic powder
- 1/4 teaspoon black pepper
- 1 teaspoon salt
Recipe
- 1 chop potatoes, carrots and garlic.
- 2 heat oil in a large stock pot. add potatoes, carrots and garlic and saute for a few minutes.
- 3 dissolve bouillon cubes in boiling water and add to stock pot.
- 4 add basil, oregano, garlic powder, pepper and salt. stir and cover.
- 5 let everything simmer for 20 minutes, or until the carrots and potatoes are soft.
- 6 remove from heat and stir.
- 7 pour 3/4 of the mixture (including all the liquid) into a blender and puree until all is blended well. the blended amount should make about 2 bowls.
- 8 pour soup into bowls and top each with the remaining vegetable bits left in the stock pot.
