Balsamic Roasted Sausages With Red Veggies

Total Time: 40 mins Preparation Time: 5 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 3 red onions, peeled and cut into wedges
  • 3 red peppers, deseeded and cut into quarters
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 8 sausages
  • 9 ounces cherry tomatoes
  • 4 sprigs thyme (optional)
  • 1 tablespoon clear honey

Recipe

  • 1 heat the oven to 400â°f put the onions and peppers in a roasting tin, drizzle over the oil and vinegar and season well with salt and pepper. roast for 10 minutes.
  • 2 nestle the sausages, tomatoes and thyme, if using, in and around the veggies. drizzle over the honey and cook for 25 mins more, turning the sausages halfway, until the sausages are cooked and everything is golden and sticky.
  • 3 serve with mashed potatoes or crusty bread.
