Any Fruit Muffins

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 10 ounces all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 3/4 ounces light brown sugar
  • 3 1/2 ounces sugar
  • 1 cup buttermilk
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup apricot preserves

Recipe

  • 1 preheat oven to 400 degrees f (205 degrees c).
  • 2 stir together the flour, baking powder, salt and sugars in a large bowl. make a well in the center.
  • 3 in a small bowl beat egg. stir in buttermilk and melted butter.
  • 4 add milk mixture to flour mixture. mix gently with a rubber spatula until moistened, but do not beat. the batter will be lumpy.
  • 5 spoon one tablespoon of batter into paper lined muffin pan cups. add one teaspoon of jam to each cup. fill cups with remaining batter.
  • 6 bake for 20 minutes, or until golden.
