Any Fruit Muffins

Ingredients
- 10 ounces all-purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 3/4 ounces light brown sugar
- 3 1/2 ounces sugar
- 1 cup buttermilk
- 1/4 cup unsalted butter (melted)
- 1/4 cup apricot preserves
Recipe
- 1 preheat oven to 400 degrees f (205 degrees c).
- 2 stir together the flour, baking powder, salt and sugars in a large bowl. make a well in the center.
- 3 in a small bowl beat egg. stir in buttermilk and melted butter.
- 4 add milk mixture to flour mixture. mix gently with a rubber spatula until moistened, but do not beat. the batter will be lumpy.
- 5 spoon one tablespoon of batter into paper lined muffin pan cups. add one teaspoon of jam to each cup. fill cups with remaining batter.
- 6 bake for 20 minutes, or until golden.
