Baked Corn From Scratch

Ingredients
- Servings: 6
- 2 cups frozen corn, thawed (pour off excess water)
- 2 tablespoons shortening
- 1 1/2 tablespoons flour
- 1 cup milk
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 2 eggs, beaten
- 1/2 cup bread (optional) or 1/2 cup cracker crumb, mixed with melted butter (optional)
Recipe
- 1 melt shortening and then add the flour.
- 2 add milk gradually and bring to a boil, stirring constantly.
- 3 add corn, sugar, salt and pepper and heat thoroughly.
- 4 remove from heat and add beaten eggs.
- 5 pour into greased baking dish, sprinkle with buttered crumbs if desired.
- 6 bake at 350°f for 35 minutes or until firm.
