Craze Layered Salad

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • arugula, lettuce*
  • 1/4 lb radish, quartered
  • 1 cucumber, sliced thin
  • 1 cup fresh strawberry, halved*
  • 1 cup frozen blueberries
  • 1 cup frozen peas
  • 3 carrots, shredded
  • chives
  • 1/4 cup olive oil
  • 1/8 cup balsamic vinegar
  • tarragon, 2 twig leaves crushed in fingers
  • 1/4 teaspoon garlic

Recipe

  • 1 in glass bowl layer ingredients as listed.
  • 2 save 2 strawberry halves for topping garnish floret.
  • 3 snip chives into 1 inch pieces and sprinkle over top of salad.
  • 4 dressing.
  • 5 in carafe or mixing bowl blend ingredients and shake or mix well.
  • 6 pour over salad and serve with a crusty loaf of bread to dip with.
  • 7 or use as a side for soup or sandwich.
  • 8 this is also good with some shredded chicken breasts for a meal.
  • 9 for vegans use chick peas to add protien.
