Bacon Cheese Potatoes

Ingredients
- Servings: 8
- 8 -10 medium potatoes (2 1/2 to 3 pounds)
- 1/2 cup finely chopped onion
- 1 lb processed cheese, cubed (velveeta)
- 1 cup mayonnaise
- 1/2 lb sliced bacon, cooked and crumbled
- 3/4 cup sliced ripe olives
- chopped fresh parsley (optional)
- paprika (optional)
Recipe
- 1 peel the potatoes; place in a saucepan and cover with water.
- 2 cook until tender but firm; drain and cube.
- 3 in a bowl, mix potatoes with onion, cheese and mayonnaise.
- 4 transfer to an ungreased 13 x 9 x 2 inch baking dish.
- 5 sprinkle with bacon and olives (if using).
- 6 cover and bake at 350 for 30 minutes or until heated through.
- 7 sprinkle with parsley and paprika if desired.
