Bacon Cheese Potatoes

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 8 -10 medium potatoes (2 1/2 to 3 pounds)
  • 1/2 cup finely chopped onion
  • 1 lb processed cheese, cubed (velveeta)
  • 1 cup mayonnaise
  • 1/2 lb sliced bacon, cooked and crumbled
  • 3/4 cup sliced ripe olives
  • chopped fresh parsley (optional)
  • paprika (optional)

Recipe

  • 1 peel the potatoes; place in a saucepan and cover with water.
  • 2 cook until tender but firm; drain and cube.
  • 3 in a bowl, mix potatoes with onion, cheese and mayonnaise.
  • 4 transfer to an ungreased 13 x 9 x 2 inch baking dish.
  • 5 sprinkle with bacon and olives (if using).
  • 6 cover and bake at 350 for 30 minutes or until heated through.
  • 7 sprinkle with parsley and paprika if desired.
