Country Lane Lamb Chops Casserole

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 6 lamb chops (1/2-inch thick)
  • salt and pepper
  • 3 1/2 cups applesauce
  • 1/2 cup seedless raisin
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1 (8 ounce) package wide egg noodles

Recipe

  • 1 season lamb chops with salt and pepper.
  • 2 brown in heavy skillet, remove and keep warm.
  • 3 combine applesauce, raisins, salt, spices in skillet and simmer 10 minutes, stirring occasionally.
  • 4 meanwhile, cook noodles in boiling salted water until tender; drain.
  • 5 add fruit mixture to noodles; mixing well.
  • 6 arrange noodles in a large greased 2 quart casserole.
  • 7 top with browned chops, cover and bake at 325ºf for 45 minutes to 1 hour, or until chops are tender.
