Country Lamb Ribs -- Ole! (crock Pot)

Ingredients
- Servings: 6
- 3 1/4 lbs country-style lamb ribs (bone-in)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper (freshly ground)
- 2 limes (juice and zest)
- 1 1/2 tablespoons garlic (minced)
- 1 serrano chili pepper (minced with seeds)
- 3 tablespoons raw sugar
Recipe
- 1 spray 4-quart crock pot with cooking spray, or use a crock pot liner!
- 2 salt and pepper the ribs on both sides; place into crock pot.
- 3 add lime juice, zest, minced garlic, and minced chili pepper.
- 4 sprinkle raw sugar over all.
- 5 cover with lid and crock on high for 4 1/2 hours, or until fork tender.
- 6 note: use your own judgement regarding time, if you crock on low!
