Country Lamb Ribs -- Ole! (crock Pot)

Total Time: 4 hrs 40 mins Preparation Time: 10 mins Cook Time: 4 hrs 30 mins

Ingredients

  • Servings: 6
  • 3 1/4 lbs country-style lamb ribs (bone-in)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper (freshly ground)
  • 2 limes (juice and zest)
  • 1 1/2 tablespoons garlic (minced)
  • 1 serrano chili pepper (minced with seeds)
  • 3 tablespoons raw sugar

Recipe

  • 1 spray 4-quart crock pot with cooking spray, or use a crock pot liner!
  • 2 salt and pepper the ribs on both sides; place into crock pot.
  • 3 add lime juice, zest, minced garlic, and minced chili pepper.
  • 4 sprinkle raw sugar over all.
  • 5 cover with lid and crock on high for 4 1/2 hours, or until fork tender.
  • 6 note: use your own judgement regarding time, if you crock on low!
