Country Pudding

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 egg
  • 1/2 cup sugar
  • 1/4 cup flour
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts
  • 1/2 cup chopped apple (or canned pumpkin or crushed pineapple or persimmon pulp or other fruit)
  • 1 teaspoon vanilla

Recipe

  • 1 beat egg and sugar and mix well.
  • 2 sift flour, salt and baking powder and add to egg.
  • 3 mix well.
  • 4 fold in nuts, fruit and vanilla.
  • 5 pour into greased 8-inch pan.
  • 6 bake at 325°f for 30 minutes.
  • 7 cool.
  • 8 serve warm or at room temperature with ice cream or whipped cream.
