Country Potato And Onion Pie

Ingredients

- 1/4 cup butter
- 5 large new potatoes, sliced
- 2 medium onions, sliced
- 12 large eggs, lightly beaten
- 2 cups grated swiss cheese
- 1/2 cup milk
- 1/2 cup chopped fresh parsley
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
Recipe
- 1 preheat oven to 400°f.
- 2 in a 10 inch cast iron skillet, melt butter over medium heat. add the potatoes and onions. bake until tender and crispy, about 25 minutes.
- 3 in a medium bowl, combine eggs, cheese, milk, parsley, salt, and pepper. pour over potatoes and onions. bake until eggs are set, about 20-30 minutes longer.
