Country Potato And Onion Pie

Ingredients

  • Servings: 8
  • 1/4 cup butter
  • 5 large new potatoes, sliced
  • 2 medium onions, sliced
  • 12 large eggs, lightly beaten
  • 2 cups grated swiss cheese
  • 1/2 cup milk
  • 1/2 cup chopped fresh parsley
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Recipe

  • 1 preheat oven to 400°f.
  • 2 in a 10 inch cast iron skillet, melt butter over medium heat. add the potatoes and onions. bake until tender and crispy, about 25 minutes.
  • 3 in a medium bowl, combine eggs, cheese, milk, parsley, salt, and pepper. pour over potatoes and onions. bake until eggs are set, about 20-30 minutes longer.
