Country Lemon Cake

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • Servings: 8
  • 1 cup granulated sugar
  • 1 cup corn oil
  • 3 eggs
  • 1 cup nonfat yogurt
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 pinch grated nutmeg
  • 1 lemon, rind of, of grated

Recipe

  • 1 in a largr bowl, beat the sugar and oil together using an electric mixer.
  • 2 add eggs 1 at a time,beating after each addition.
  • 3 add yougart.
  • 4 in a small bowl, whisk together the flour, baking powder, nutmeg and lemon peel.
  • 5 add flour mixture to sugar-oil mixture.
  • 6 blend well to incorporate.
  • 7 grease and flour a 9 inch tube pan,shaking out excess flour.
  • 8 pour in batter and bake in a preheated 350 degree oven, or until tester comes out clean.
  • 9 cool completely, and dust with powdered sugar, if desired.
