Country Lamb Chops

Ingredients
- 1/4 cup olive oil
- 2 yellow squash, cut into 1-inch chunks
- 1 zucchini, cut into 1-inch chunks
- 1 onion, cut into 1/4-inch slices
- 4 lamb loin chops (about 1-inch thick, 1 1/2 lbs total)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 lb mushroom, quartered
- 28 ounces spaghetti sauce
- 1 teaspoon dried oregano
Recipe
- 1 in a large skillet, heat oil over medium-high heat. add yellow squash, zucchini, and onion. cook 4 to 6 minutes, or until vegetables are tender, stirring occasionally. transfer vegetables to a bowl and set aside.
- 2 season lamb chops with salt and pepper. in the same skillet, brown lamb chops over medium-high heat about 2 minutes on each side. return vegetables to the skillet, reduce heat to low, and stir in mushrooms, spaghetti sauce, and oregano.
- 3 cover and cook 30 to 35 minutes, or until lamb chops are cooked through.
