Country Inn Pumpkin Doughnuts

Total Time: 1 hr 35 mins Preparation Time: 1 hr 15 mins Cook Time: 20 mins

Ingredients

  • 2 eggs, beaten
  • 1 cup sugar
  • 2 tablespoons oil
  • 1/2 cup buttermilk
  • 1 cup fresh pumpkin puree or 1 cup canned pumpkin
  • 4 cups flour
  • 2 teaspoons salt
  • 4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • powdered sugar, for coating

Recipe

  • 1 in a large bowl, beat eggs and sugar until light and fluffy.
  • 2 add oil, pumpkin and buttermilk.
  • 3 mix dry ingredients together and add to egg mixture.
  • 4 chill 1 hour.
  • 5 turn out on floured board and roll to 1/2-inch thickness.
  • 6 use a donut cutter to cut donuts.
  • 7 deep fry at 375°f.
  • 8 until brown on one side.
  • 9 turn over.
  • 10 brown other side.
  • 11 drain well on paper towels and roll in sugar.
