Country Inn Pumpkin Doughnuts

Ingredients
- 2 eggs, beaten
- 1 cup sugar
- 2 tablespoons oil
- 1/2 cup buttermilk
- 1 cup fresh pumpkin puree or 1 cup canned pumpkin
- 4 cups flour
- 2 teaspoons salt
- 4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- powdered sugar, for coating
Recipe
- 1 in a large bowl, beat eggs and sugar until light and fluffy.
- 2 add oil, pumpkin and buttermilk.
- 3 mix dry ingredients together and add to egg mixture.
- 4 chill 1 hour.
- 5 turn out on floured board and roll to 1/2-inch thickness.
- 6 use a donut cutter to cut donuts.
- 7 deep fry at 375°f.
- 8 until brown on one side.
- 9 turn over.
- 10 brown other side.
- 11 drain well on paper towels and roll in sugar.
