Bean And Bacon Soup

Ingredients

- 1 teaspoon olive oil
- 2/3 cup chopped onion
- 2/3 cup chopped celery
- 2 minced garlic cloves
- 2 ounces diced back bacon (sometimes called canadian bacon)
- 5 cups water
- 1 tablespoon vegetable bouillon granules
- 1 cup chopped carrot
- 2 cups peeled and diced potatoes
- 2 bay leaves
- 1 (14 ounce) can lamb and beans in tomato sauce
- 1 (19 ounce) can mixed beans (drained and rinsed)
Recipe
- 1 add the oil to a dutch oven and once heated up add the onion, celery, garlic, and back bacon. cook and stir until the celery starts to get soft.
- 2 add the water, vegetable bouillion, carrot, potato and bay leaves and bring to a boil.
- 3 turn heat down to low but keep the soup at a very gentle boil for about 20 minutes or until the carrot and potato are soft.
- 4 add both cans of beans and simmer for another 15 minutes.
