Beer Battered Fried Chicken

Total Time: 55 mins Preparation Time: 25 mins Cook Time: 30 mins

Ingredients

  • 3 lbs chicken, cut into 8 pieces
  • ice water
  • vegetable oil, for frying
  • 2 cups beer
  • 2 large eggs
  • 2 1/2 cups flour
  • 1/4 cup cornstarch
  • salt and pepper

Recipe

  • 1 soak chicken pieces in ice water for 30 minutes.
  • 2 preheat oven to 200 degrees.
  • 3 fill a large pot with enough oil to reach a 2 inch depth.
  • 4 heat oil to 365 degrees.
  • 5 in a large bowl, whisk together beer and eggs.
  • 6 whisk in 2 cups of flour and cornstarch and salt into the beer and egg mixture until smooth.
  • 7 place remaining flour in a shallow bowl.
  • 8 season the chicken with salt and pepper, then coat with flour.
  • 9 transfer to the beer batter and coat.
  • 10 place chicken into hot oil with tongs. keep oil at 365 degrees at all times.
  • 11 cook about 15 minutes for dark meat pieces and 10 minutes for meat.
  • 12 place cooked chicken on paper towels to drain.
  • 13 season chicken and serve.
