Beer Battered Fried Chicken

Ingredients
- 3 lbs chicken, cut into 8 pieces
- ice water
- vegetable oil, for frying
- 2 cups beer
- 2 large eggs
- 2 1/2 cups flour
- 1/4 cup cornstarch
- salt and pepper
Recipe
- 1 soak chicken pieces in ice water for 30 minutes.
- 2 preheat oven to 200 degrees.
- 3 fill a large pot with enough oil to reach a 2 inch depth.
- 4 heat oil to 365 degrees.
- 5 in a large bowl, whisk together beer and eggs.
- 6 whisk in 2 cups of flour and cornstarch and salt into the beer and egg mixture until smooth.
- 7 place remaining flour in a shallow bowl.
- 8 season the chicken with salt and pepper, then coat with flour.
- 9 transfer to the beer batter and coat.
- 10 place chicken into hot oil with tongs. keep oil at 365 degrees at all times.
- 11 cook about 15 minutes for dark meat pieces and 10 minutes for meat.
- 12 place cooked chicken on paper towels to drain.
- 13 season chicken and serve.
