Barbecued Breakfast Wrap

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 2
  • 1 tablespoon vegetable oil
  • 2 teaspoons vegetable oil
  • 2 cups potatoes, diced into 1/2 inch pieces
  • 1/2 cup yellow onion, thinly sliced
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1/2 cup barbecue sauce
  • 1/4 cup green onion, sliced thin and green part only
  • 1 teaspoon oregano, dried
  • 2 eggs
  • 2 (10 inch) tortillas

Recipe

  • 1 heat oil over medium heat in a nonstick skillet large enough to hold all of the potatoes in a single layer.
  • 2 add potatoes and yellow onion.
  • 3 season with salt and pepper.
  • 4 cook until crispy on all sides-about 8-10 minutes,stirring frequently.
  • 5 reduce heat and cook until tender when pierced with a fork,5-10 minutes.
  • 6 remove from heat.
  • 7 put the potatoes in a mixing bowl and add barbecue sauce,green onion and oregano.
  • 8 srir to coat.
  • 9 return skillet to he stove,add remaining 2 teaspoons of oil and heat over medium heat.
  • 10 crack the eggs into the skillet and season with salt and pepper.
  • 11 cook over high heat for 2 minutes or until just whites are cooked.
  • 12 remove from heat.
  • 13 divide the potatoes between the two tortillas and place one egg on top,sunny side up and wrap.
