Barbecued Breakfast Wrap

Ingredients

- 1 tablespoon vegetable oil
- 2 teaspoons vegetable oil
- 2 cups potatoes, diced into 1/2 inch pieces
- 1/2 cup yellow onion, thinly sliced
- 1/4 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1/2 cup barbecue sauce
- 1/4 cup green onion, sliced thin and green part only
- 1 teaspoon oregano, dried
- 2 eggs
- 2 (10 inch) tortillas
Recipe
- 1 heat oil over medium heat in a nonstick skillet large enough to hold all of the potatoes in a single layer.
- 2 add potatoes and yellow onion.
- 3 season with salt and pepper.
- 4 cook until crispy on all sides-about 8-10 minutes,stirring frequently.
- 5 reduce heat and cook until tender when pierced with a fork,5-10 minutes.
- 6 remove from heat.
- 7 put the potatoes in a mixing bowl and add barbecue sauce,green onion and oregano.
- 8 srir to coat.
- 9 return skillet to he stove,add remaining 2 teaspoons of oil and heat over medium heat.
- 10 crack the eggs into the skillet and season with salt and pepper.
- 11 cook over high heat for 2 minutes or until just whites are cooked.
- 12 remove from heat.
- 13 divide the potatoes between the two tortillas and place one egg on top,sunny side up and wrap.
