Baked Ziti

Ingredients

- 16 ounces ziti pasta
- 1/2 lb carrot, sliced
- 1 bell pepper, julienned (green or red)
- 1 onion, sliced
- 1 zucchini, sliced
- 2 cups cheddar cheese or 2 cups swiss cheese, grated
- 1/4 cup butter
- 1/4 cup flour
- 3 cups milk
- salt and pepper
Recipe
- 1 preheat oven to 350°f
- 2 butter a 9x13-inch baking dish.
- 3 bring a large pot of water to a boil.
- 4 cook the ziti and carrots together for about 6 minutes.
- 5 drain well.
- 6 pour into the baking dish along with the pepper, onion, zucchini, and 1 cup cheese.
- 7 in a medium-size saucepan, melt the butter.
- 8 add the flour and whisk until you have a smooth paste.
- 9 slowly add the milk, whisking constantly.
- 10 turn the heat to low and cook for 12 to 15 minutes, whisking constantly.
- 11 season to taste with salt and pepper.
- 12 pour sauce over pasta and vegetables.
- 13 sprinkle remaining cheese on top.
- 14 bake for 30 minutes or until bubbly.
