Baked Ziti

Total Time: 55 mins Preparation Time: 25 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 16 ounces ziti pasta
  • 1/2 lb carrot, sliced
  • 1 bell pepper, julienned (green or red)
  • 1 onion, sliced
  • 1 zucchini, sliced
  • 2 cups cheddar cheese or 2 cups swiss cheese, grated
  • 1/4 cup butter
  • 1/4 cup flour
  • 3 cups milk
  • salt and pepper

Recipe

  • 1 preheat oven to 350°f
  • 2 butter a 9x13-inch baking dish.
  • 3 bring a large pot of water to a boil.
  • 4 cook the ziti and carrots together for about 6 minutes.
  • 5 drain well.
  • 6 pour into the baking dish along with the pepper, onion, zucchini, and 1 cup cheese.
  • 7 in a medium-size saucepan, melt the butter.
  • 8 add the flour and whisk until you have a smooth paste.
  • 9 slowly add the milk, whisking constantly.
  • 10 turn the heat to low and cook for 12 to 15 minutes, whisking constantly.
  • 11 season to taste with salt and pepper.
  • 12 pour sauce over pasta and vegetables.
  • 13 sprinkle remaining cheese on top.
  • 14 bake for 30 minutes or until bubbly.
