Apple Walnut Scone With Ricotta

Ingredients
- 1 large apple, skin on, grated (seeds removed)
- 1 egg
- 1/2 cup ricotta cheese
- 1/4 cup sugar
- 1 tablespoon stevia
- 1 teaspoon vanilla
- 3/4 cup walnuts, rough chop
- 3/4 cup ground flax seeds
- 2 teaspoons cinnamon
- 2/3 cup whole wheat flour
- 2/3 cup oat bran
- 2/3 cup all-purpose flour
- 1/2 teaspoon salt
- 3/4 teaspoon baking soda
- 2 teaspoons baking powder
- 1/4 cup butter
Recipe
- 1 mix together first 9 ingredients, blending well.(apple through cinnamon).
- 2 stir together flours, oat bran, salt, baking soda and baking powder.
- 3 cut butter in to the flour mixture.
- 4 stir wet ingredients into dry ingredients, mix well.
- 5 put dough (will be stickie) on floured surface and pat out into a large circle.
- 6 cut into 8 servings and transfer to greased baking sheet.
- 7 bake at 375 for 20-23 minutes.
