Apple Walnut Scone With Ricotta

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 1 large apple, skin on, grated (seeds removed)
  • 1 egg
  • 1/2 cup ricotta cheese
  • 1/4 cup sugar
  • 1 tablespoon stevia
  • 1 teaspoon vanilla
  • 3/4 cup walnuts, rough chop
  • 3/4 cup ground flax seeds
  • 2 teaspoons cinnamon
  • 2/3 cup whole wheat flour
  • 2/3 cup oat bran
  • 2/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/4 cup butter

Recipe

  • 1 mix together first 9 ingredients, blending well.(apple through cinnamon).
  • 2 stir together flours, oat bran, salt, baking soda and baking powder.
  • 3 cut butter in to the flour mixture.
  • 4 stir wet ingredients into dry ingredients, mix well.
  • 5 put dough (will be stickie) on floured surface and pat out into a large circle.
  • 6 cut into 8 servings and transfer to greased baking sheet.
  • 7 bake at 375 for 20-23 minutes.
