Country-fried Okra And Green Tomatoes

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb okra, sliced
  • 1 large green tomato, unpeeled and chopped into bite size pieces
  • salt and pepper
  • 3/4 cup plain cornmeal
  • 1/4 cup plain flour
  • 1/2 cup oil

Recipe

  • 1 combine okra and tomato in a bowl.
  • 2 season with the salt and pepper.
  • 3 mix the cornmeal and flour and toss the veggies in this mixture until coated.
  • 4 heat oil in a large skillet over mediun-high heat.
  • 5 add okra and tomatoes.
  • 6 cook, stirring and turning occasionally, until crisp and browned- about 15-20 minutes.
  • 7 remove okra and tomatoes to a serving platter which has been covered with a paper towel to drain.
  • 8 serve and heat while hot.
