Cornmeal Yeast Muffins

Ingredients

  • Servings: 36
  • 1 (1/4 ounce) package dry yeast
  • 1/4 cup water (105-115f)
  • 1 3/4 cups skim milk
  • 1/3 cup sugar
  • 1/4 cup vegetable oil
  • 1/4 cup margarine or 1/4 cup butter
  • 1 teaspoon salt
  • 2 eggs or 1/2 cup egg substitute
  • 1 1/2 cups cornmeal
  • 5 -5 1/2 cups flour, divided
  • butter-flavored cooking spray

Recipe

  • 1 dissolve yeast in warm water in a large bowl; let stand 5 minutes.
  • 2 combine milk, sugar, oil, margarine, and salt in a saucepan and cook over low heat until margarine melts.
