Cornmeal Pie

Total Time: 25 mins Preparation Time: 20 mins Cook Time: 5 mins

Ingredients

  • 2 tablespoons cornmeal
  • 3/4 cup sugar
  • 1 cup milk
  • 2 egg yolks, beaten
  • 1/2 cup margarine
  • 1 teaspoon vanilla
  • 1 pie shell
  • meringue
  • 2 egg whites
  • 4 tablespoons sugar

Recipe

  • 1 preheat oven to 450 degrees.
  • 2 mix cornmeal and sugar together.
  • 3 add to next 4 ingredients.
  • 4 cook over medium heat stirring constantly until boiling and thickens.
  • 5 remove from heat and pour into pie shell.
  • 6 add meringue (instructions to follow).
  • 7 bake for 5 minutes or until meringue is golden brown.
  • 8 meringue.
  • 9 beat egg whites until frothy.
  • 10 gradually beat in sugar.
  • 11 continue beating until stiff peaks form.
  • 12 spread over pie filling.
