Bedeviled Bacon

Ingredients

  • Servings: 4
  • 12 slices thick bacon (1/2 to 3/4 pound)
  • 1 extra-large egg
  • 1 teaspoon prepared mustard
  • 1/4 teaspoon pepper
  • 1 teaspoon cider vinegar
  • 3/4 cup commercial cracker meal

Recipe

  • 1 cut the bacon slices in half widthwise; set aside.
  • 2 in a small mixing bowl, place the egg, mustard, cayenne pepper, and vinegar; using an electric mixer, beat on medium speed until blended and smooth. pour the egg mixture into a pie pan; set aside.
  • 3 sprinkle the cracker meal over a 1-foot-square piece of waxed paper; set aside.
  • 4 dip the bacon pieces in the egg mixture; then, dredge lightly in the cracker meal and place, single layer, on ungreased broiler racks over broiler pans. let stand 15 minutes.
  • 5 bake the bacon in a preheated oven for 18 to 20 minutes. watch carefully during the last few minutes of baking, as the bacon can overbrown quickly at the end of the baking period.
