Baked Chicken With A Spicy Orange Glaze

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 chicken breasts, skin on
  • 2 teaspoons black peppercorns
  • 1 teaspoon ground allspice
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 2 teaspoons ground cinnamon
  • 4 garlic cloves, peeled and crushed
  • 175 ml orange juice
  • 2 teaspoons honey
  • 2 tablespoons olive oil

Recipe

  • 1 preheat the oven to 220°c,gas 7.
  • 2 using a rolling pin, crush the black peppercorns.
  • 3 then place along with the cinnamon, cumin, oregano and garlic into a bowl large enough to take the chicken breasts. mix well.
  • 4 add the orange juice, olive oil and honey.
  • 5 add the chicken and coat in the marinade.
  • 6 leave for at least 1 hour.
  • 7 drain, then place the chicken into a baking tray.
  • 8 bake in the preheated oven for about 20-25 minutes.
  • 9 take a regular peek- the chicken must be cooked and juicy,but not overcooked, dry and stringy.
  • 10 meanwhile, pop the marinade into a saucepan and cook over a gentle heat until it goes thick and syrupy.
  • 11 cut each cooked breast into three pieces and drizzle over the reduced glaze.
  • 12 serve with plain boiled rice or mashed potatoes with a few chopped spring onions stirred through at the last moment.
