Coronado Potatoes

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • 24 small red potatoes
  • 4 tablespoons butter
  • 1 green onion, minced
  • 2 garlic cloves, minced
  • 1/4 cup chopped parsley
  • 1/2 teaspoon lemon juice
  • 1 chives, minced
  • parsley sprig (to garnish)

Recipe

  • 1 boil potatoes approximately 25 minutes.
  • 2 melt butter in an 8 inch skillet. saute green onion and garlic for 3 minutes. stir in parsley and lemon juice.
  • 3 drain potatoes and place in a serving dish. pout butter mixture over potatoes to thoroughly coat. sprinkle chives on top of the potatoes. garnish with parsley sprigs.
