Coronado Potatoes

Ingredients
- 24 small red potatoes
- 4 tablespoons butter
- 1 green onion, minced
- 2 garlic cloves, minced
- 1/4 cup chopped parsley
- 1/2 teaspoon lemon juice
- 1 chives, minced
- parsley sprig (to garnish)
Recipe
- 1 boil potatoes approximately 25 minutes.
- 2 melt butter in an 8 inch skillet. saute green onion and garlic for 3 minutes. stir in parsley and lemon juice.
- 3 drain potatoes and place in a serving dish. pout butter mixture over potatoes to thoroughly coat. sprinkle chives on top of the potatoes. garnish with parsley sprigs.
