Corny Dog Muffins

Ingredients

• 2 packages yellow corn muffin mix (i use martha white)
• 2 tablespoons brown sugar
• 1/2 cup egg substitute
• 1 cup skim milk
• 1 (11 ounce) can corn, drained
• 4 -5 hot dogs, chopped (i use fat free oscar meyer)
• non stick cooking spray

Recipe

• 1 combine muffin mix and brown sugar in a bowl.
• 2 combine eggs and milk; stir into muffin mixture until moistened.
• 3 stir in hot dogs and corn.
• 4 fill paper-lined muffin cups sprayed with non stick cooking spray about 3/4 full.
• 5 bake at 400° for 14-16 minutes or until golden brown.
