Cranberry White Chocolate Treats

Ingredients

  • Servings: 24
  • 1/4 cup unsalted butter
  • 1 (10 1/2 ounce) bag miniature marshmallows
  • 4 ounces white chocolate, chopped
  • 1/4 cup seedless red raspberry jam
  • 1 1/2 teaspoons raspberry extract or 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon red food coloring
  • 7 cups toasted rice cereal
  • 1 cup dried cranberries

Recipe

  • 1 line a 13x9 inch baking dish with non-stick aluminum foil which extends the 2 inches beyond the edges.
  • 2 in a saucepan, melt the butter over medium low heat; stir in marshmallows, with a rubber spatula, and continue stirring until almost melted.
  • 3 stir in chocolate, jam, extract, and food coloring until blended and smooth; remove from heat.
  • 4 stir in cereal and cranberries and press mixture into the prepared baking dish.
  • 5 let cool completely, peel off foil; cut into 24 squares.
