Cranberry Vinegar

Ingredients
- 12 ounces cranberries
- 3/4 cup vinegar
- 1/3 cup mild honey
- 1 (2 inch) cinnamon sticks
Recipe
- 1 wash cranberries and pat dry.
- 2 in a medium stainless or enamel pot combine berries with the vinegar, honey, and cinnamon stick.
- 3 bring to a full rolling boil.
- 4 reduce heat and simmer for 8-10 minutes.
- 5 you want the cranberries to burst.
- 6 strain hot vinegar through 3 layers of wet cheesecloth.
- 7 pour into hot sterile jars and seal.
- 8 keeps in fridge for 1 year.
