Cranberry White Chocolate Chip Cookies

Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon baking soda
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract (almond would work as well)
- 1 1/3 cups sugar
- 2 large eggs
- 1 3/4 cups white chocolate chips
- 6 ounces dried sweetened cranberries
- 1/2-1 cup slivered almonds
Recipe
- 1 place cranberries in a large bowl. boil enough water to cover the cranberries, pour over berries and allow to steep for 8 minutes. drain completely and dry on paper towels.
- 2 combine flour and next 3 ingredients; set aside.
- 3 beat butter at medium speed with an electric mixer until creamy and then add vanilla; gradually add sugar, beating well. add eggs, 1 at a time, beating until blended after each addition.
- 4 add flour mixture to butter mixture gradually, beating at low speed until blended. stir in white chocolate morsels and cranberries.
- 5 drop cookie dough by heaping tablespoonfuls lightly greased baking sheets.
- 6 if desired place almond slivers on top of cookie dough.
- 7 bake at 350° for 10 to 12 minutes or until lightly browned on bottom. remove to wire racks to cool completely.
