Cranberry Stuffed Acorn Squash

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 12
  • 6 acorn squash
  • 1/4 cup water
  • 1 lb fresh cranberries
  • 2 granny smith apples
  • 1 cup sugar
  • 2 tablespoons lemon juice
  • 3/4 cup fresh squeezed orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon lemon zest
  • 1/2 cup chopped pecans

Recipe

  • 1 preheat oven to 375.
  • 2 place squash cut side down in baking pan with 1/4c water in the pan. bake for 45min until just tender.
  • 3 combine stuffing ingredients and distribute evenly among squash halves.
  • 4 return to oven and bake an additional 15min.
