Cranberry Stuffed Acorn Squash

Ingredients
- Servings: 12
- 6 acorn squash
- 1/4 cup water
- 1 lb fresh cranberries
- 2 granny smith apples
- 1 cup sugar
- 2 tablespoons lemon juice
- 3/4 cup fresh squeezed orange juice
- 1 tablespoon orange zest
- 1 teaspoon lemon zest
- 1/2 cup chopped pecans
Recipe
- 1 preheat oven to 375.
- 2 place squash cut side down in baking pan with 1/4c water in the pan. bake for 45min until just tender.
- 3 combine stuffing ingredients and distribute evenly among squash halves.
- 4 return to oven and bake an additional 15min.
