Banana & Chocolate Chip Muffins, Get Tasting & Low-fat

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 3 medium bananas, very ripe
  • 1 egg
  • 1/3 cup skim milk
  • 1 cup brown sugar
  • 1 1/2 cups wholemeal rye flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup chocolate chips
  • 2 tablespoons walnuts, chopped

Recipe

  • 1 preheat oven to 180°c.
  • 2 lightly coat 12 muffin tin with cooking spray.
  • 3 in large bowl, mash bananas with fork. whisk in egg, milk, brown sugar & chocolate chips, & walnuts.
  • 4 in separate bowl, combine flour, baking soda, and salt.
  • 5 add flour mixture to banana mixture and combine well.
  • 6 fold in chocolate chips and walnuts.
  • 7 spoon equal amounts of batter into 12 muffin cups.
  • 8 bake (not fan-bake) for 25 minutes or until cooked.
  • 9 allow to cool slightly in pan, then remove to wire rack.
