Banana & Chocolate Chip Muffins, Get Tasting & Low-fat

Ingredients
- 3 medium bananas, very ripe
- 1 egg
- 1/3 cup skim milk
- 1 cup brown sugar
- 1 1/2 cups wholemeal rye flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup chocolate chips
- 2 tablespoons walnuts, chopped
Recipe
- 1 preheat oven to 180°c.
- 2 lightly coat 12 muffin tin with cooking spray.
- 3 in large bowl, mash bananas with fork. whisk in egg, milk, brown sugar & chocolate chips, & walnuts.
- 4 in separate bowl, combine flour, baking soda, and salt.
- 5 add flour mixture to banana mixture and combine well.
- 6 fold in chocolate chips and walnuts.
- 7 spoon equal amounts of batter into 12 muffin cups.
- 8 bake (not fan-bake) for 25 minutes or until cooked.
- 9 allow to cool slightly in pan, then remove to wire rack.
