Banana And Coconut Tart

Total Time: 55 mins Preparation Time: 30 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1 unbaked pie shell (or puff pastry)
  • 100 ml milk
  • 80 g desiccated coconut
  • 125 g sugar
  • 2 eggs
  • 1 fluid ounce rum
  • 4 -5 bananas
  • icing sugar, to decorate

Recipe

  • 1 preheat oven to 375°f
  • 2 put pastry case in a greased pie dish, or use puff pastry to line a pie dish.
  • 3 cook blind for 15 minutes.
  • 4 beat eggs, add coconut and sugar.
  • 5 bring milk to boil and add little by little to mixture.
  • 6 bring whole mixture to boil to thin.
  • 7 remove from heat, add rum.
  • 8 pour mixture over pastry, chop banana and arrange on top to decorate.
  • 9 cook for 10 minutes in oven.
  • 10 sprinkle with icing sugar and serve.
