Bacon Corn Casserole

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 6 slices bacon
  • 2 tablespoons chopped onions
  • 1 tablespoon chopped parsley (optional)
  • 2 tablespoons butter
  • 2 tablespoons plain flour
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 2 (9 ounce) packages frozen corn or 2 (11 ounce) cans niblet corn

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 cook bacon and crumble.
  • 3 set aside.
  • 4 cook onion in butter til transparent.
  • 5 blend in flour and salt.
  • 6 add sour cream gradually, keeping texture smooth.
  • 7 bring mixture to a boil and add corn and parsley.
  • 8 reduce heat and cook til heated through.
  • 9 fold in 1/2 the bacon.
  • 10 pour in greased 1 quart baking dish.
  • 11 garnish with remaining bacon.
  • 12 cook for 30 minutes.
  • 13 serve immediately.
