Cottage Cheese Cornbread

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • 1 cup cornmeal
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons brown sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1 cup cottage cheese
  • 1/4 cup canola oil
  • 1 cup frozen corn

Recipe

  • 1 preheat oven to 375°f
  • 2 in a medium-sized bowl, combine the cornmeal through to the salt and set aside.
  • 3 in another bowl, mix up the sugar, buttermilk, cottage cheese and oil and then blend it with the dry ingredients.
  • 4 stir in corn.
  • 5 pour batter into a buttered baking dish and bake for 30-40 minutes or until the centre comes out clean.
