Apricot Vanilla Vodka

Total Time: 40 mins Preparation Time: 25 mins Cook Time: 15 mins

Ingredients

  • Servings: 32
  • 1 (1 liter) bottle vodka
  • 3/4 lb dried apricot
  • 2 vanilla beans
  • water

Recipe

  • 1 place the dried apricots in a saucepan with just enough water to cover.
  • 2 bring to boil and immediately turn off.
  • 3 allow to soak until soft about 15 minutes.
  • 4 in a large glass jar (don't use plastic or metal) place the apricots, any remaining liquid, the vanilla beans and the vodka.
  • 5 give it a good stir and place in the fride.
  • 6 allow to rest in the fridge about a week, stirring or gently shaking on occasion.
  • 7 you can either strain at this point and decant or, if you use a 'sun tea' type of jar with a spiggot at the bottom you can just pour directly from the jar.
