Cottage Cheese Casserole

Total Time: 4 hrs 20 mins Preparation Time: 20 mins Cook Time: 4 hrs

Ingredients

  • 2 1/2 teaspoons margarine
  • 1/2 cup fresh mushrooms, chopped
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1 garlic, colve minced
  • 3/4 cup low-sodium tomato paste
  • 4 cups macaroni
  • 1 1/4 cups water
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 1/4 cup parsley, chopped
  • 2 cups low-fat low-sodium cottage cheese
  • 1/3 cup grated parmesan cheese

Recipe

  • 1 saute mushrooms, onions, celery, and garlic in margarine in a medium skillet over medium heat.
  • 2 combine sauteed vegetables, marjoram, tomato paste, macoroni, water, salt, and sugar.
  • 3 put half of macoroni mixture in slow cooker,or casserole dish.
  • 4 top with 1 cup cottage cheese, half of parmesan cheese, and half of the parsley.
  • 5 repeat layers.
  • 6 cover, and cook on high in the slow cooker for 4-5 hours, or bake in the oven until done.
