Cottage Cheese Casserole

Ingredients
- 2 1/2 teaspoons margarine
- 1/2 cup fresh mushrooms, chopped
- 1/2 cup onion, chopped
- 1/2 cup celery, chopped
- 1 garlic, colve minced
- 3/4 cup low-sodium tomato paste
- 4 cups macaroni
- 1 1/4 cups water
- 2 teaspoons salt
- 1 teaspoon sugar
- 1/4 cup parsley, chopped
- 2 cups low-fat low-sodium cottage cheese
- 1/3 cup grated parmesan cheese
Recipe
- 1 saute mushrooms, onions, celery, and garlic in margarine in a medium skillet over medium heat.
- 2 combine sauteed vegetables, marjoram, tomato paste, macoroni, water, salt, and sugar.
- 3 put half of macoroni mixture in slow cooker,or casserole dish.
- 4 top with 1 cup cottage cheese, half of parmesan cheese, and half of the parsley.
- 5 repeat layers.
- 6 cover, and cook on high in the slow cooker for 4-5 hours, or bake in the oven until done.
