Cranberry-ginger Relish

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 12 ounces cranberries
  • 1 1/2 cups orange juice
  • 1 cup sugar
  • 2 tablespoons gingerroot, finely chopped

Recipe

  • 1 combine ingredients in heavy large saucepan.
  • 2 bring to boil over high heat, stirring until sugar dissolves.
  • 3 reduce heat to low and simmer until relish is thick, stirring often and mashing berries slightly, about 15 minutes.
  • 4 transfer relish to small bowl.
  • 5 cover and chill.
  • 6 can be prepared up to 1 month ahead.
  • 7 keep chilled.
