Cranberry-ginger Relish

Ingredients
- Servings: 6
- 12 ounces cranberries
- 1 1/2 cups orange juice
- 1 cup sugar
- 2 tablespoons gingerroot, finely chopped
Recipe
- 1 combine ingredients in heavy large saucepan.
- 2 bring to boil over high heat, stirring until sugar dissolves.
- 3 reduce heat to low and simmer until relish is thick, stirring often and mashing berries slightly, about 15 minutes.
- 4 transfer relish to small bowl.
- 5 cover and chill.
- 6 can be prepared up to 1 month ahead.
- 7 keep chilled.
