Cranberry Wild Rice

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 1 1/4 cups chopped yellow onions
  • 2 tablespoons butter or 2 tablespoons margarine
  • 1 (16 ounce) can whole berry cranberry sauce
  • 1 (16 ounce) package long grain and wild rice blend
  • 1 1/2 cups thinly sliced celery

Recipe

  • 1 saute onion in butter in 10 inch skillet until tender, but not brown.
  • 2 break up cranberry w/ fork in seperate bowl & add enough water to make 5 1/2 cups.
  • 3 add cranberry mixture, rice, and your choice of seasonings to skillet & stir.
  • 4 bring to a boil. cover tightly and cook over low heat until all liquid is absorbed (about 25 minutes).
  • 5 stir in celery and serve!
