Cranberry Wild Rice

Ingredients
- Servings: 8
- 1 1/4 cups chopped yellow onions
- 2 tablespoons butter or 2 tablespoons margarine
- 1 (16 ounce) can whole berry cranberry sauce
- 1 (16 ounce) package long grain and wild rice blend
- 1 1/2 cups thinly sliced celery
Recipe
- 1 saute onion in butter in 10 inch skillet until tender, but not brown.
- 2 break up cranberry w/ fork in seperate bowl & add enough water to make 5 1/2 cups.
- 3 add cranberry mixture, rice, and your choice of seasonings to skillet & stir.
- 4 bring to a boil. cover tightly and cook over low heat until all liquid is absorbed (about 25 minutes).
- 5 stir in celery and serve!
