Cowboy Caviar

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1/2 cup brown sugar
  • 1/2 cup apple vinegar
  • 1/2 cup vegetable oil
  • 1 red pepper
  • 1 yellow pepper
  • 1 orange bell pepper
  • 1/2 red onion
  • 4 stalks celery
  • 1 (15 ounce) can shoe peg corn
  • 1 (15 ounce) can black-eyed peas, drained
  • 1 (15 ounce) can black beans, rinsed

Recipe

  • 1 in a sauce pan mix together sugar, vinegar and oil. while stirring bring to a boil. set aside to cool.
  • 2 finely chop peppers, onion and celery. add remaining ingredients. mix with cooled dressing 2 hours before serving.
  • 3 serve with tortilla chips.
