Ingredients
- 1/2 cup brown sugar
- 1/2 cup apple vinegar
- 1/2 cup vegetable oil
- 1 red pepper
- 1 yellow pepper
- 1 orange bell pepper
- 1/2 red onion
- 4 stalks celery
- 1 (15 ounce) can shoe peg corn
- 1 (15 ounce) can black-eyed peas, drained
- 1 (15 ounce) can black beans, rinsed
Recipe
- 1 in a sauce pan mix together sugar, vinegar and oil. while stirring bring to a boil. set aside to cool.
- 2 finely chop peppers, onion and celery. add remaining ingredients. mix with cooled dressing 2 hours before serving.
- 3 serve with tortilla chips.
