Couscous With Pepperoni And Broccoli

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 lb broccoli, cut into florets
  • 1 tablespoon minced garlic clove
  • 1/2 teaspoon fresh coarse ground black pepper
  • 1 tablespoon oil
  • 1 1/2 cups water
  • 1 (5 1/2 ounce) package couscous with sun-dried tomatoes
  • 1 (6 ounce) package pepperoni slices
  • 1/4 cup kalamata olive, pitted and quartered

Recipe

  • 1 in large skillet over medium heat, cook broccoli, garlic and pepper in oil 5 to 6 minutes or until crisp-tender.
  • 2 add water and flavor packet from couscous; bring to a boil.
  • 3 remove from heat. stir in couscous and pepperoni. cover. let stand 7 minutes. sprinkle with olives and serve.
