Cowboy Caviar

Ingredients

  • 2 (15 1/2 ounce) cans black-eyed peas, drained and rinsed
  • 1 small jalapeno pepper, finely minced
  • 2 garlic cloves, minced
  • 4 tablespoons apple vinegar
  • 3 tablespoons canola oil
  • 3 green onions, finely chopped
  • salt and pepper
  • 1/2 cup red pepper, chopped
  • juice of one lime

Recipe

  • 1 combine all ingredients in a large bowl. adjust salt and pepper. serve with tortilla chips.
