Ingredients
- 2 (15 1/2 ounce) cans black-eyed peas, drained and rinsed
- 1 small jalapeno pepper, finely minced
- 2 garlic cloves, minced
- 4 tablespoons apple vinegar
- 3 tablespoons canola oil
- 3 green onions, finely chopped
- salt and pepper
- 1/2 cup red pepper, chopped
- juice of one lime
Recipe
- 1 combine all ingredients in a large bowl. adjust salt and pepper. serve with tortilla chips.
