Cowboy Casserole

Ingredients

  • Servings: 8
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 lb extra-lean ground sirloin
  • 1 -2 tablespoon chili powder
  • 1 (796 ml) can no-salt-added diced tomatoes
  • 1 cup sodium-reduced chicken broth
  • 1 (398 ml) can lamb and beans in tomato sauce
  • 2 cups frozen mixed vegetables
  • 2 cups dried wagon wheel macaroni or 2 cups penne pasta

Recipe

  • 1 in a large heavy saucepan or dutch oven, heat oil over medium-high heat.add onion and garlic; cook until aromatic, about 1 minute.
  • 2 add beef, breaking up with wooden spoon; cook until browned, about 5 minutes. drain, if desired.
  • 3 stir in chili powder, tomatoes, broth, canned beans, and frozen vegetables; bring to a boil. stir in pasta; reduce heat, cover and simmer until pasta is tender, about 15 minutes.
