Cookies & Cream Pie

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 1 1/2 cups cookie crumbs
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted
  • 1/3 cup cornstarch
  • 2 cups milk
  • 1/2 cup sugar
  • 3 egg yolks
  • 1 teaspoon vanilla
  • 3 egg whites
  • 2 tablespoons sugar

Recipe

  • 1 preheat oven to 350°f.
  • 2 mix cookie crumbs, brown sugar and melted butter.
  • 3 press half of this mix against the bottom of a pie pan, et aside.
  • 4 dissolve corn starch into 2 tbsp of milk, set aside.
  • 5 bring the milk to a boil with 1/2 cup of sugar.
  • 6 at the first sign of boils pour a little bit of the milk egg yolks, whipping constantly (to prevent eggs from curdling).
  • 7 pour into milk along with the corn starch.
  • 8 continue cooking on very low heat until thickened, approximately 5 minutes, stirring constantly.
  • 9 pour into pie crust.
  • 10 make a meringue from egg whites and remaining sugar.
  • 11 spread pie.
  • 12 sprinkle remaining cookie crumbs.
  • 13 bake approximately 20 minutes, until meringue is golden.
