Copycat Olive Garden Zuppa Tuscana

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 10
  • 1 lb hot italian sausage
  • 1/2 lb thick cut bacon
  • 1 large red onion
  • 1 head garlic, chopped
  • 1 bunch kale, stems removed and chopped
  • 1 cup heavy cream
  • 6 medium red potatoes
  • 2 1/2 quarts chicken stock
  • salt and pepper

Recipe

  • 1 in a large soup kettle:.
  • 2 1. brown sasage and crumble - set aside
  • 3 2. cut bacon into 1/2" strip and cook in kettle - remove put aside.
  • 4 3. drain off most of the fat and saute the onion and garlic in the kettle.
  • 5 4. add the chicken stock and bring to a boil.
  • 6 5. add the potatoes and cook until almost tender.
  • 7 6. add sasuage, bacon and kale and heat back to a boil.
  • 8 7. add heavy creamy and stir, cut off heat and let set 5-10 minutes.
  • 9 8. add salt and pepper to taste and serve.
