Copycat Ihop Griddle Cakes

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 1 1/2 cups buttermilk
  • 1/3 cup cream of wheat or 1/3 cup quaker oat bran
  • 1/3 cup sugar
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt (optional)
  • 1/4 cup oil (olive oil is fine)
  • 1 egg
  • 1 teaspoon vanilla

Recipe

  • 1 mix buttermilk and cream of wheat together.
  • 2 stir in baking soda.
  • 3 beat egg, oil, vanilla, sugar, and salt (if using) together.
  • 4 whisk in buttermilk mixture.
  • 5 stir in flour and baking powder. if batter is too thick you may add additional buttermilk.
  • 6 spoon about 1/4 cup batter per griddle cake on hot grill or cast iron frying pan.
  • 7 cook till golden, flip and continue cooking.
  • 8 keep warm in oven while preparing the rest of the griddlecakes.
  • 9 serve hot with choice of toppings.
