Copycat Ihop Griddle Cakes

Ingredients
- 1 1/2 cups buttermilk
- 1/3 cup cream of wheat or 1/3 cup quaker oat bran
- 1/3 cup sugar
- 1 1/4 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt (optional)
- 1/4 cup oil (olive oil is fine)
- 1 egg
- 1 teaspoon vanilla
Recipe
- 1 mix buttermilk and cream of wheat together.
- 2 stir in baking soda.
- 3 beat egg, oil, vanilla, sugar, and salt (if using) together.
- 4 whisk in buttermilk mixture.
- 5 stir in flour and baking powder. if batter is too thick you may add additional buttermilk.
- 6 spoon about 1/4 cup batter per griddle cake on hot grill or cast iron frying pan.
- 7 cook till golden, flip and continue cooking.
- 8 keep warm in oven while preparing the rest of the griddlecakes.
- 9 serve hot with choice of toppings.
